Yum Yum Yummy! Inspired by
Terry Walters' Clean Food... a vegetarian chowder. Everything is the same with the exception of butter vs nut butter. I opted to use rice milk as she suggests as I am not a fan of soy (check out:
Sally Fallon on Dangers of Soy and
The Truth About Soy) and I have been restricting my dairy consumption (more on this later). However, switching for milk or cream is an option... though I think it tastes rather delicious
as is. Surprisingly, it's rather light tasting and I think dairy would make it heavy in the wrong way- especially in this HOT summer. Enjoy!
