A Healthier + Dangerously Delicious Rice Crispy Treat Recipe


Okay people... these are REALLY TRULY dangerously delicious. So much so you may think you made enough to share with your loves, but then you come to find that you ate them all and are dying from a sugar induced comma once they find you. :) So just FYI... you've been warned! Oh and yes however sadly, but honestly... it's in everyone's best to agree that these babies are not low glycemic.
Ingredients:
5-6 cups of organic brown puffed rice
(make sure it is just puffed rice- no sugars, additives, etc)
2/3 cups honey
2/3 cups almond butter
1 tablespoon cinnamon
Optional: nuts, coconut shavings, chocolate chips.

Directions: Take all the ingredients and warm together in a pan on low. Mix constantly till blended. I dump approximately 1/2 to 3/4 of the puffed rice (approx 3 cups) into an 8 x 8 glass pan. Then I add the wet ingredients and mix around with a spoon. Keep adding the puffed rice and mixing till gone.

It will be sticky, but you want to spread the mixture out as much as possible and I found this is the easiest way without getting your fingers all gooped up. I also plan on experimenting with other "sugar" alternatives such as xyiltol (not sure how it will blend), yacon syrup (prob the winner), brown rice syrup, etc to help alleviate the rush. Just keep the sugar load in mind. I haven't had a sugar rush like this in years.
