Lettuce Tacos with Purslane: Vegan + Gluten, Soy & Dairy Free

These lettuce tacos are really easy to make. Gluten, dairy and soy free- they're vegan, delicious and low on the glycemic index. Made with half local ingredients they're a breeze to put together.

Purslane is a relatively unknown succulent weed that grows everywhere... it's one of the best sources of omega-3 fatty acids, containing higher amounts than some fish oils. Also a great source of iron, calcium, magnesium, and vitamins A, B6 and C.
