Recipe: Light Pasta


Other than salads and smoothies, when it's hot out I like to lighten up the pastas. This one I made consisted of onions, garlic, olives, fresh orange tomatoes, and mushrooms. I lightly marinated them together with olive oil and fresh basil.

I toss this mix on some pasta (I love the springs) and throw in some fresh spinach at the end. Why? 1. So it is not so wilted and 2. It makes you chew your pasta as opposed to swallowing it... which most of us do. Chewing pasta helps it be more digestible. Yeah for digestion!
